Description

Withering is an ancient method, known since roman times that let the grapes wither on the plant to concentrate sugars and the structure of wine. In the Venetiae, for climatic issues such as cold and humid, it has been reinterpreted: the more mature bunches are collected and left to wither withers (in Picai dialect) in the old floors, to favor their dehydration. The slow drying process leads to a higher concentration of sugars in the grape and a weight loss of the bunch of about 30%. Cecilia Beretta reinterpreted the ancient technique in an innovative way for wines outside the denomination, creating the interesting IGT Picàie.

Features
Bright ruby red, the nose offers delicate notes of red fruits and marasca, sweet hints of vanilla and spices. In the mouth it is full-bodied, warm, with soft and enveloping tannins, persistent. On the finish there are notes of withering.

Pairing
Second important dishes of red meats, Fiorentina, game, braised and roasted. Excellent also with aged cheeses or to be tasted simply with aged Parmigiano Reggiano flakes.

Serve at 18 °C.

Alcohol content 14.5% vol.
