Withering is an ancient method, known since Roman times, that lets the grapes wither on the plant to concentrate sugars and the structure of wine. In the Venetiae, for climatic issues such as cold and humidity, it has been reinterpreted: the more mature bunches are collected and allowed to wither. The slow drying process leads to a higher concentration of sugars in the grape and weight loss of the bunch of about 30%.
