Salsiccia Secca Dolce is a traditional Italian dry-cured sausage known for its mild and savory flavour. Unlike its spicier counterpart, this sausage is characterized by its sweetness and rich, aromatic taste. Originating from regions like Calabria and Tuscany, it is made from high-quality pork meat that is coarsely ground and blended with a mix of spices, such as black pepper, fennel seeds, and sometimes a touch of wine.

The sausage is encased in natural pork casings and left to dry-cure for several weeks, during which time it develops a firm texture and a deep, reddish-brown colour. The absence of chili peppers in the seasoning mix allows the natural flavors of the pork and the subtle spices to shine through.
